Today makes one month of low carb dieting for me, I've lost a little over 14 pounds and have been able to wear clothes that I couldn't at the beginning of summer! Tonight I made this yummy strawberry shortcake for dessert, even my picky eaters ate it :)
Low Carb Strawberry Shortcake
Crust
1 3/4 cup Almond flour
2T coconut flour
1T baking powder
1/2 t Splenda
1 egg white
1/2 t pure vanilla extract
6 T salted butter (room temperature)
Filling
4 oz cream cheese
1/4c heavy whipping cream
5 packets of Splenda
1/4 t pure vanilla extract
8-10 strawberries sliced thin with 2 packets of Splenda, let chill while crust bakes & cools.
Preheat oven to 350 degrees, mix dry ingredients, add wet ingredients blend well until dough forms.
Place dough on parchment paper, cover with another sheet of parchment paper and roll out to a 10inch or so circle.
Bake 18-22 minutes, until edges are brown, check often. Cool completely.
For the filling mix all ingredients well.
After crust has cooled top with the filling, sliced strawberries & a small serving of RediWhip.
I'm not sure of the exact carb count but its low, makes about 8 servings.

Update
This summer is flying by! We have been so busy traveling that I couldn't believe it when I saw the calendar, WOW! In just one short month my oldest son will be a freshmen in High School and my baby will be in 7th grade :( they are growing up way too fast and this Mommy doesn't like it one bit.
We had a great vacation last week, one of the best in years! The boys, my Mom & me are going to Alaska in 9 days to visit my baby brother, his wife & four children, I'm so excited to see them & Alaska. I don't have a clue what type of clothing to bring.
My summer college class is almost finished and my fall classes start in a month. Going back to school has always been a dream of mine, I appreciate it much more as an adult than I ever did as a teenager.
I really miss blogging, I still read a few favorites but I miss writing my blog. Hopefully, I can get back into the habit.

A Little Progress
The weight loss has been really slow lately because of large conversation hearts & Cadbury eggs, LOL. However, I have the flu (type B) and I have no appetite. To date I have lost a little over 9lbs since December 27, 2012, not too shabby for a month.

It's Here
I have been married for a little over sixteen years but I still get excited when I see Southern Living's Weddings bookazine hits the store shelves, I squealed with delight when I saw it at my local grocery store today. Of course I bought a copy, after I get my house cleaned and homework finished I plan on relaxing with a big ole diet Pepsi and a Cadbury egg while I daydream of tulle, frosting & flowers!

Books & Food
Books have been purchased/rented for this semester. All of my life I've loved buying school supplies, I'm making a trip to Target tomorrow and I can hardly wait.
This low carb thing is getting easier everyday, tonight's dinner was Salisbury steak, green beans & faux mashed potatoes, Tom really liked it and Johnson shocked everyone by taking a bite of the mashed cauliflower :)

Exciting Times
After a long break from college I'm starting classes on the 14th, I have four classes on campus and one online. If all goes as planned, I will have my teaching degree by December 2014.
I'm not a huge fan of New Years Resolutions but this year I ave a few goals for myself; the biggie was going back to school, learn Spanish, lose 70 pounds and take care of my skin.
Low carb seems to be the only diet that works for me since having my thyroid removed. Tonight's dinner was delicious! Baked fish, steamed broccoli, and faux twice baked potato.
