Beautiful Weather


The weatherman said the Bluegrass State is in for a beautiful weekend and if all goes well we are heading to our little Somerset Cottage tomorrow for a much needed break, we are picking the boys up from school early and will be to the lake by 4:00pm, hopefully.

I have decided to give myself a gift, do you want to know what it is? A cleaning lady to help me with my spring cleaning, I have been gone so much over the last 3 months my house looks like tornado blew through. The best part of it all is that she likes to paint and is willing to help me with the dining room and kitchen. Does anyone have any suggestions on covering a dark red paint?

Tuesdays at the Table


My Chihuahua Bites is hosting Tuesdays at the Table, I thought I would share with you a great chicken casserole that is a family favorite.


Poppy Seed Chicken Casserole


Crust & Topping


3 pkgs of Town House Crackers--crushed
3 sticks of unsalted butter--melted
3 T. of poppy seeds


Mix together and set aside


Filling


6 split chicken breast cooked & cubed
2 cans of cream of chicken soup
1 1/2 cups of sour cream
1 small can of mushrooms--chopped
salt & pepper to taste


Mix together, spray a 9X13 casserole dish with Pam, then press half the cracker mixture in the bottom of the dish, then add the filling and top with the remaining crackers. Bake uncovered at 350 for 1 hour, let stand for 20-30 minutes then serve with your favorite vegetable.

Returning to Normal

Life is slowly but surely returning to normal. Tom's grandfather spent a week in the hospital, the doctors have decided that he can't tolerate the chemo. He is still on insulin and blood thinners twice a day, this should be over next week sometime and then we will only need to take care of him as needed, not on a daily basis.

I can't wait for warm weather! The pool will be open next week, that always lifts my spirits. I hope to start painting next week, I'm so tried of the red in my kitchen and dining room, I have chosen a beautiful shade of blue to lighten things up! Our landscaping is in dire need of a makeover, if anyone has any ideas for budget landscaping please let me know. I have been reading several blogs, I'm amazed by the talent some women have when it comes to redoing their homes on a budget if you get a chance checkout Whimsies & Whatnots you will be amazed at her counters. Busy Week

Even though it's only Wednesday I have been so busy and it is only going to get busier! As of 11:30am this morning both of my sons have confirmed cases of the flu:( Tom's grandfather's diabetes is spinning out of control from the chemotherapy, so I have to go give him insulin 2-3 times a day and I have started cooking a hot meal each day for them. If anyone has any great casserole recipes please email them to me. My doctor and endocrinologist both agree that my thyroid needs to be removed because the left side has enlarged since my last CT scan and now lymph nodes are involved, the surgeon feels that it doesn't, now I'm waiting to see another surgeon and a thyroid specialist. Please keep our family in your prayers.

We are having a beautiful day today, it makes me want to go to the lake, open the pool and lay in the sun!! I'm wanting to plant a small garden with tomatoes, cucumbers, lettuce and onions, does anyone have any tips for creating a small garden?
