Use What You Have~~Cooking
I didn't realize how much food I wasting until I cleaned my fridge out and noticed the trash can was fuller than the fridge. I decided to really make an effort to not be as wasteful in the kitchen. My grocery bill is really starting to come down, which is always helpful when feeding two growing boys. As we speak I have the veggies from the photo in the oven, the potatoes were the only thing that I bought this week, the carrots, green onions and broccoli were about to spoil so I cleaned them up seasoned them and they are roasting in the oven with a whole chicken, yummy! I feel better about myself when I'm managing my household in the way it should be. I'm going to try to do this little "Use What You Have" theme for the next few weeks, if you have any suggestions please let me know. Have a great evening!

We always eat leftovers, and I try and use everything we have in the fridge until it is not safe to do so.
Groceries have almost doubled in the last year..hmmmm.

I feel ya...I'm guilty of the same things. One bad habit I have is eating dinner (in front of the TV of course) and not going back in the kitchen the rest of the night, forgetting all about any leftovers sitting there, then they sit out and spoil overnight. UGH! I make myself so mad sometimes!
And I can't believe I just caught on to the concept of freezing just a year ago! So, one thing I do is buy a lot of meat when it's on sale and divvy out portions and wrap in foil, then freeze. Or if I make too much soup or spaghetti sauce, I freeze it. My mom used to keep a plastic bowl in the fridge just for dumping in leftover vegetables from dinner to use later in a soup. When the bowl got full, she would throw a big pot of soup together.
I, too, am not very good at using all of our leftovers. Cooking only for myself and a 4 yr old, it is easy to let things go to waste. I am trying hard to not let that happen as often. In Feb and Mar, I have used almost everything in my freezer, which was good, but now I need to clean the big freezer in the garage and carefully and thoughtfully restock. I need suggestions, too, and some new recipes!
Your dinner tonight sounds delicious! I roasted a chicken yesterday and am going to make chicken salad with the leftovers tonight.
